Dry Ingredients
- 3 cups whole wheat flour
- 1 tsp baking powder
- 1 tbsp cinnamon
- ¼ tsp baking soda
- 1 tsp salt
Wet Ingredients
- 3 eggs
- 3 cups shredded zucchini
- ⅔ cup of coconut oil liquified
- 3 tsp vanilla
- ½ to ⅔ cup of maple syrup
- 2 cups blueberries
Instructions
- Preheat oven to 350F
- Stir dry ingredients together
- Add wet ingredients to dry ingredients and stir
- Pour into two separate greased loaf pans
- Bake 50 minutes
