Blueberry Zucchini Bread

Dry Ingredients

  • 3 cups whole wheat flour
  • 1 tsp baking powder
  • 1 tbsp cinnamon
  • ¼ tsp baking soda
  • 1 tsp salt

Wet Ingredients

  • 3 eggs
  • 3 cups shredded zucchini
  • ⅔ cup of coconut oil liquified
  • 3 tsp vanilla
  • ½ to ⅔ cup of maple syrup
  • 2 cups blueberries

Instructions

  1. Preheat oven to 350F
  2. Stir dry ingredients together
  3. Add wet ingredients to dry ingredients and stir
  4. Pour into two separate greased loaf pans
  5. Bake 50 minutes
